Story details

In Syria, handling between the orchard and the mill is central to preserving olive-oil quality, growers and processors told state news agency SANA in a report published on October 22. Grower Yasser Daaboul pointed to tree care, rainfall, variety and fruit maturity, and urged clean ventilated containers and rapid delivery for pressing.

Mill owner Mahmoud Bilal described a sequence of weighing, leaf removal, washing, crushing, paste mixing, separation and filtration. He said equipment cleanliness, operating conditions and suitable packaging help preserve the oil. His account describes one operator’s process and should not be treated as a national quality certification.

The report separately cites a preliminary agriculture-ministry forecast of 954,730 tonnes of olives for the current season, with about 20% for table use and 80% for pressing. Expected oil output was 190,946 tonnes, based on a 25% extraction assumption. Those are linked forecasts and assumptions, not measured final production or additional quantities to be added together.
